UNITE HERE Local 1 food workers at O’Hare International Airport recently released a new report, Putting Sustainability on the Table: Airport Workers’ Vision for $3 Billion of Food and Drink at O’Hare. The report recommends that the City of Chicago and Chicago Department of Aviation prioritize cooking fresh, healthy food using locally grown produce and minimizing food waste. Encouraged by steps that the City and HMSHost Corporation, O’Hare’s food-service provider and subsidiary of the Italian company Autogrill S.p.A., have recently taken towards improving sustainability, Local 1 food workers took the opportunity to offer ideas and solutions for incorporating sustainability practices into the airport’s food services. They hope to provide everyone who patrons O’Hare’s restaurants and concessions with healthy and environmentally responsible food choices while also reducing the airport’s impact on the environment.
