Food Tank recently had the opportunity to speak with Brad Nelson, Vice President and Corporate Chef at Marriott International, who was one of the speakers at the 2015 Food Tank Summit in partnership with The George Washington University.
Food Tank (FT): What will your message be at the Food Tank Summit?
Brad Nelson (BN): The culture of our food system must be influenced to bring the conversation from “we are feeding the world” to “we are feeding the world today AND tomorrow”
FT: How are you contributing to building a better food system?
BN: It would be my hope that we can build the market for better curation of our given resources, and ultimately our food supply for future generations.
FT: What are the biggest obstacles or challenges you face in achieving your organization’s goals?
BN: Closing the delta between cost and value perception.
FT: Who is your food hero and why?
BN: Probably not what you would expect, but I think the late Michael Batterberry, who started Food and Wine & Food Arts magazines. No one ever had the forum to bring so many chefs and stories together.
FT: In 140 characters or fewer, what is the most important thing we can all do to help change the food system.
BN: Use less, see more, share stories, engage with food with purpose for tomorrow.
