Today kicks off the first installment of the food education series How Does it Grow? The agricultural project seeks to create more empathetic relationships between people and their plates. The premise: if eaters know more about how a given food came to look, smell and taste like the foods we love,they will come to recognize more symbiotic relationships with them. The project addresses what seems to be a missing step in tracking a food’s route from farm to plate—how does it grow?
How Does it Grow? takes a closer look at the natural processes of different foods, with the goal of inspiring greater demand for naturally grown, whole foods. This week’s episode takes a look at a food whose story often does not see the light of day—mushrooms.
